Open Question: Do fresh eggs need to be gathered the same day the hen lays them?

I am considering raising chickens on a property a few miles from my house. I have an automatic feeder for daily feeding and a pond on sight for water. I will normally be able to check on them twice a day but sometimes I may have to miss a day. Will the eggs gathered after missing a day still be safe to eat.

When I go into My Computer, highlight my C: Drive and go to file-properties (as shown) I get that 123 GB are used on my HDD. However, when I open my C: Drive, and select all files (yes, all hidden and system files are shown) and go to file-properties, my computer indicated that only 101GB has been used. So, I'm missing 23GB of HD space. Where is it, and how the hell do I get it back?
